Who says a plant-based recipe can’t be for everyone? This cauliflower “steak” is a hit for all palates and is perfect for World Vegan Month!

Ingredients:
- 3 tbsp of Olive Oil
- 1 Lemon
- 2 tbsp of Harissa Spice
- Sea Salt
- 1 Head of Cauliflower
- 1 bag of Marcona Almonds
Instructions:
- In a small bowl, mix 3 tbsp olive oil, juice of ½ a lemon, 2 tbsp harissa spice, and a pinch of sea salt.
- Cut 1 head of cauliflower in half, then break into small pieces. Place on a parchment-lined sheet pan.
- Coat cauliflower with the harissa mixture and bake at 425°F for 25 minutes, until golden and crispy.
- Chop Marcona almonds into small pieces and sprinkle on top.
