Crispy Chicken Tacos

Taco night just got way better! These crispy chicken tacos are loaded with all the flavor you crave. Let’s dive into it.

Ingredients:

  • Corn tortillas
  • Rotisserie chicken
  • Roasted corn
  • Cilantro
  • Green chiles
  • Crumbled Cotija cheese
  • Shredded Monterey Jack cheese
  • Plain Greek yogurt
  • Lime
  • Mayo
  • Hot sauce
  • Cumin
  • Chile powder
  • Garlic salt
  • Sea salt

Instructions:

  1. Preheat the oven to 375°F
  2. In a bowl, combine rotisserie chicken, roasted corn, green chiles, and cilantro to create your street corn-inspired chicken mixture
  3. Lay corn tortillas on a baking sheet and warm them in the oven for 3-4 minutes. This helps prevent them from breaking when baking.
  4. Remove tortillas from the oven and top each one with shredded Monterey Jack cheese
  5. On one side of the tortilla, add the chicken mixture
  6. Fold over and press down
  7. Repeat with remaining tortillas and chicken
  8. Spray lightly with avocado oil spray and bake for 15 minutes
  9. Broil for 2-3 minutes to get them crispy
  10. Remove from the oven, top with cilantro and crumbled Cotija cheese
