White Bean Kale Salad

Bringing the Erewhon magic to your kitchen! Our take on the viral White Bean Kale Salad - fresh, nourishing, and packed with flavor.

Ingredients:

Salad:

- 1 bunch kale destemmed and chopped

- 1 15oz can white beans drained and rinsed

- 1 avocado pitted and sliced

- ¼ cup hemp hearts

- ¼ cup sunflower seeds

- ¼ cup pumpkin seeds

Salad Dressing:

- ½ cup olive oil

- 3 tablespoons lemon juice

- 1-2 tablespoons pure maple syrup

- 2 teaspoons dijon mustard

- 1 garlic clove minced

- salt & pepper to taste

Instructions:

1. In a small bowl, whisk together the dressing ingredients until combined.

2. Remove the tough stems from the kale and discard. Tear or chop the kale leaves then add to a large bowl. Drizzle in a little bit of the salad dressing and massage into kale for 30 seconds to 1 minute or until softened.

3. Add all of the remaining ingredients and toss until combined. Drizzle with as much of the remaining dressing as desired and toss once more. Enjoy!
