
There’s nothing better than a bowl of homemade tomato soup! It’s simple, creamy, and perfect for cozy days. Let’s make it together!
Ingredients:
- 4 cups of ripe tomatoes (or 1 can of whole tomatoes)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 cups vegetable broth
- 1/2 cup heavy cream (or coconut milk for a dairy-free version)
- Salt & pepper to taste
- Fresh basil (for garnish)
Instructions:
- Heat olive oil in a large pot over medium heat. Add onions and garlic, cooking until softened (about 5 minutes).
- Add tomatoes (fresh or canned) and vegetable broth. Bring to a simmer and cook for 20 minutes, allowing the flavors to meld.
- Use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender.
- Stir in the cream, and season with salt and pepper to taste.
- Serve hot, garnished with fresh basil for that perfect touch of flavor!
