Lasagna Soup

A lighter twist on the viral favorite, with all the delicious, cozy flavors - just without the heaviness!

Good soup!

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • ½ lb ground beef
  • Salt & pepper, to taste
  • 2 tbsp tomato paste
  • 2 cups marinara sauce
  • 3-4 cups chicken broth
  • 1 zucchini, chopped
  • ½ box lasagna noodles
  • ½ cup grated parmesan
  • ¼ cup fresh basil, chopped
  • ½ cup Greek yogurt

Instructions:

  1. Sauté onion & garlic in olive oil until fragrant. Add ground beef, salt, and pepper.
  2. Once browned, stir in tomato paste, marinara, chicken broth, and zucchini. Bring to a boil.
  3. Add broken lasagna noodles and cook until tender.
  4. Stir in parmesan, Greek yogurt, and basil until melted and creamy.
