Ingredients:
- 2 cups raw cream
- 5 egg yolks
- ½ cup sugar
- 6 passion fruits (seeds scraped, juice set aside)
- ¼ cup fresh passion fruit juice
- 2 tbsp cornstarch
- 1 vanilla bean (scraped)
Instructions:
- Heat cream, sugar, and vanilla beans until steaming.
- Whisk egg yolks & cornstarch, then slowly add hot cream.
- Return to heat, stirring until thickened.
- Mix in passion fruit juice and strain.
- Spoon into passion fruit shells and chill for 2 hours.
- Caramelize sugar with a torch before serving.
