Summer Peach and Burrata Bliss Salad

Celebrate peach season with this vibrant salad featuring juicy seared peaches and creamy burrata. Let’s dive in!

Ingredients:

  • 4-6 ripe peaches (white and yellow)
  • 3 cups fresh arugula
  • ¼ cup chopped pistachios
  • 1 bunch fresh basil (torn or chopped)
  • Burrata

Honey dijon balsamic vinegar:

  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • ¼ cup balsamic vinegar
  • ⅓ cup extra virgin olive oil
  • Salt & pepper

Instructions:

  1. Cut peaches in half and remove the pit.
  2. Preheat a large skillet or grill on medium-high heat.
  3. Drizzle peaches with olive oil and season with salt & pepper and sear until golden brown.
  4. Remove and let cool.
  5.  Whisk together Dijon mustard, honey, balsamic vinegar, and olive oil in a small bowl.
  6. Season with salt and pepper, and set aside.
  7. On a large platter, layer arugula as the base, sprinkle with half the basil, and tear apart the burrata to add to the platter.
  8. Arrange the peaches, sprinkle with pistachios, and top with the remaining basil.
  9. Drizzle with the honey dijon balsamic vinegar and finish with a touch of sea salt.
  10. Enjoy this end of summer delight!
