Sweet Potato Avocado Bites

Ingredients: 

  • 2 medium sweet potatoes
  • Olive Oil 
  • Sea Salt 
  • Pepper
  • Watermelon Radish
  • Sesame Oil 
  • Lemon 
  • Dijon Mustard 
  • 1 Red Onion
  • 1 Large Ripe Avocado 

Instructions: 

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Slice thin rounds (less than ¼ inch) from the middle of the sweet potatoes.
  3. Arrange sweet potato rounds on the baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes, turn, and roast for another 10-15 minutes until tender.
  4. For the avocado tartare, whisk sesame oil, lemon juice, mustard, and salt in a medium bowl. Add red onion and set aside.
  5. When sweet potatoes are almost done, dice the avocado and mix it into the tartare with an extra squeeze of lemon. Season to taste.
  6. Top roasted sweet potato rounds with watermelon radish slices and avocado tartare. Sprinkle it with salt to taste.
