Chocolate Apple Date Rounds with Homemade Cashew Butter! Say that ten times fast. 

This delicious snack is dairy-free, gluten-free, and packed with natural sweetness! These apple date rounds with homemade cashew butter are calling your name!

Let’s chop some apples!

Ingredients:

  • Apples
  • 200g dates
  • 1–1½ cups cashews (for the butter)
  • 2 tbsp coconut cream or milk
  • Dark chocolate (optional: dairy-free dark chocolate)

Instructions:

  1. Preheat the oven to 400°F. Toss sweet potato cubes with olive oil and 2 tsp salt. Roast for 25-30 minutes until tender.
  2. Combine the roasted sweet potatoes, chickpeas, tahini, lemon juice, garlic, nutmeg, cinnamon, cumin, and water in a blender or food processor. Blend until smooth.
  3. Add the ice cubes one at a time and blend until the hummus is smooth and fluffy.
  4. Transfer to a serving bowl, drizzle with olive oil, sprinkle with paprika, and top with sliced almonds. If desired, add parsley for extra color.
  5. Serve with warm pita or crackers, and enjoy the perfect autumn snack!
