Ingredients:
- Carrots (cut on the bias into 1½ inch pieces)
- 2 garlic cloves
- 1 tbsp balsamic vinegar (plus 1 tbsp for serving)
- 1 tbsp honey (plus 1 tbsp for serving)
- 1 tbsp avocado oil (or olive oil)
- Salt, black pepper, dried thyme
- Optional: crumbled goat cheese
Instructions:
- Preheat oven to 425°F and line a baking pan with parchment paper.
- Prep carrots: rinse, dry, peel (if desired), and slice into thirds.
- Toss carrots in a mix of oil, balsamic vinegar, honey, garlic, salt, pepper, and thyme.
- Roast in a single layer for 20-25 minutes until tender.
- Baste with the remaining balsamic mixture in the last 5-10 minutes.
- Serve with an extra drizzle of balsamic honey sauce and optional crumbled goat cheese.
