Ingredients:
- 6 cups sweet potato cubes
- 2 tbsp extra virgin olive oil (plus extra for drizzling)
- 2 ½ tsp crystal kosher salt (more to taste)
- 14 oz canned chickpeas, drained and rinsed
- ¾ cup tahini
- ¼ cup freshly squeezed lemon juice
- 3 garlic cloves
- ¼ to ½ tsp freshly ground nutmeg
- ¼ tsp cinnamon
- ¼ tsp cumin
- 5 tbsp water
- 4 to 6 ice cubes
- ½ tsp paprika
- Sliced almonds for garnish
- Parsley for garnish (optional)
Instructions:
- Preheat the oven to 400°F. Toss sweet potato cubes with olive oil and 2 tsp salt. Roast for 25-30 minutes until tender.
- In a blender or food processor, combine the roasted sweet potatoes, chickpeas, tahini, lemon juice, garlic, nutmeg, cinnamon, cumin, and water. Blend until smooth.
- Add the ice cubes one at a time and blend until the hummus is super smooth and fluffy.
- Transfer to a serving bowl, drizzle with olive oil, sprinkle with paprika, and top with sliced almonds. Add parsley for extra color, if desired.
- Serve with warm pita or crackers and enjoy the perfect autumn snack!
