Warm up your autumn meals with these easy and delicious rosemary-infused potato bites! There is nothing more comforting than crispy, crunchy, flavorful potatoes.

Ingredients:
- 1 kg potatoes, peeled & chopped into chunks
- Vegetable oil
- 1 sprig of rosemary, minced
- Zest of 1 lemon
- 4-5 garlic cloves, minced
- Olive oil
- Honey
- Parmesan
- Parsley for garnish
Instructions:
- Preheat oven to 200°C/390°F.
- Boil potatoes in salted water for 15 minutes until fork-tender. Drain, return to the pot, cover, and shake to rough up the edges for extra crispiness. Let dry for 15 minutes.
- Make garlic & rosemary oil: combine minced garlic, rosemary, lemon zest, 3 tbsp olive oil, salt & pepper.
- Add enough vegetable oil to cover the bottom of a baking pan, and heat in the oven for 15-20 minutes.
- Very carefully add potatoes to the hot oil, toss to coat, and bake for 1-1.5 hours, tossing every 20-30 minutes.
- 30 minutes before done, add garlic & rosemary oil, toss well, and finish baking.
- Drizzle with honey, sprinkle with salt, parmesan, and parsley to serve!
