Smashed Avocado with Corn Salsa

Your new go-to snack is here! This easy recipe is loaded with fresh, whole ingredients that make every bite satisfying and nutrient-packed. Perfect for a quick snack, party platter, or anytime craving.

 Ingredients:

  • 4 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 cob of corn, cooked and cut off the cob
  • 2-4 oz Cotija cheese, chopped
  • Handful of fresh cilantro, chopped
  • 2 limes
  • 2 tbsp extra virgin olive oil

Instructions:

  1. Mash the avocados with the juice of 1 lime, season with salt and pepper, and set aside.
  2. In a medium bowl, combine the cherry tomatoes, red onion, corn, Cotija cheese, cilantro, juice of the second lime, and olive oil. Season with salt and pepper to taste.
  3. Spread the mashed avocado on a plate, layer the corn salsa on top, and dig in with your favorite veggies or chips.
